In today’s post, we’re talking all about how to enjoy a Valentine’s Day date night at home. And what better way to start your meal than with a delicious Chickpea Kale Caesar Salad!? This salad features smoky, sweet BBQ chickpeas and a fantastic homemade vegan caesar salad dressing. This one is worth it for the dressing alone!

With that, I welcome you to February here at Vegan Shmegan Blog! The theme this month is date night at home! I’m going to be sharing delicious vegan date night recipes for dishes that you can make for your boo, or yourself – sometimes we’re our very best Valentine, am I right!?
The pressure to have an amazing Valentine’s day can be quite a lot. I love to take some of that pressure away by enjoying a nice Valentine’s date night at home. It feels casual, but cooking a meal with your significant other can be very relaxing and romantic. A combination I’m here for!
Valentine’s Date Night Idea
Instead of going out for Valentine’s day I have a great date night at home idea for you! I love cooking with my husband. It mostly consists of me doing everything and him stirring the food when I remind him, but we both enjoy just being together. We catch up on the day and decompress while preparing a delicious, nourishing meal.
We like to turn these nights into a fun and romantic evening by opening a bottle of vegan wine (check out Barnivore for vegan wine options) and listening to some relaxing music. We help each other prep and cook the meal and then we sit down and enjoy it together, no distractions from phones or anything else. You can even add candles to make it extra romantic.

Today I am sharing one of my very favorite salad recipes of all time with you! It’s rich, hearty and full of nutrients and protein. And it’s damn delicious if I do say so myself.
I perfected my Chickpea Kale Caesar Salad a few months back and you guys have been asking for the recipe every time I share it. I’m here to finally deliver on my promise and give you this incredible recipe!
The BBQ chickpeas are perfectly smoky and sweet and they pair like old best friends with the creamy caesar dressing. Alright, let’s talk about that dressing some more. It’s perfect, a true gift from above. I seriously make a variation of this recipe every single week and I can’t get enough. I bet it’s going to be one of your favorite vegan caesar salad dressing recipes too!

The vegan caesar salad dressing recipe has the perfect base of tahini, which I brighten up with lemon and jazz up with amazing spices. If you can’t afford or don’t enjoy tahini I recommend making this recipe with hummus. It’s the perfect substitute.
Next, to counter all of that creamy goodness we’re gonna add some simple, two ingredient smoky BBQ chickpeas. I am drooling just writing about this combo. They truly are best friends and I am excited to share this recipe with you all!

A perfectly balanced salad that pairs a creamy vegan caesar dressing with perfectly baked BBQ chickpeas.
- 1 cup Chickpeas (Garbanzo Beans), rinsed and drained
- ¼ cup vegan friendly BBQ sauce*
- 2 tbsp tahini**
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- ½ tbsp nutritional yeast
- ¼ tsp garlic powder
- ¼ tsp sea salt
- ⅛ tsp fresh cracked black pepper
- 3-4 tbsp water
- 1 batch BBQ Chickpeas
- 1 batch Vegan Caesar Dressing
- 4 cups kale approximately ½-¾ head of kale
Preheat oven to 400F
Measure 1 cup of chickpeas
Rinse, drain, and dry them with a clean kitchen towel
Add them to a small bowl
Add the BBQ sauce and combine until all chickpeas are evenly coated
Place in oven and bake for 20 minutes, stirring after 10 minutes
Combine tahini, lemon juice, dijon mustard, nutritional yeast, garlic powder, salt, and pepper to a small bowl
Mix until well combined
Add 3 tbsp of water to the dressing and mix until well combined
The dressing should be thin but not runny, perfect to drizzle over and stick to the kale
If the dressing is too thick add 1 tbsp of water
Set dressing aside
Remove leaves of kale from stems, rinse, pat dry, and add to a medium bowl
Massage the kale for 3-5 minutes until the kale is bright green and tender
Add the vegan caesar dressing to the kale and combine well
Plate the kale salad
When the chickpeas are cool add them on top of the kale
Enjoy the salad
*I love Trader Joe’s BBQ sauce
**If you can’t afford or don’t like tahini you can substitute with original hummus
