This KFC style plant based mac and cheese is perfect for satisfying that creamy, cheesy craving! And, it only takes 30 minutes to make this delicious, comforting recipe.
This mac came out so luscious and is the perfect cozy meal to enjoy while following a plant based vegan diet.
My super creamy, comforting mac n cheese is based on my original cheese sauce. I jazzed it up with some cashews and spices that are in KFC’s mac n cheese. These adjustments really did the trick.

To keep this recipe whole food plant based enjoy this sauce with some whole grain macaroni (or any shape of pasta really).

- 1 cup cubed potato
- ¼ cup cubed carrot
- ⅛ cup chopped onion
- 1 clove garlic
- ½ cup cashews
- 1 ½ cups cooking water reserved when draining
- 1 lb macaroni
- 1 tsp salt
- ⅛ tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- ¼ tsp mustard powder
- 4 tbsp nutritional yeast
- 2 tsp lemon juice
- 1 tbsp tomato paste

Bring a medium stockpot of water to a boil

Cube potatoes and carrots and add to boiling water

Boil for 5 minutes

Chop onion and cut garlic clove in half

Add to boiling water (with potatoes and carrots)

Add cashews to boiling water

Boil for 3 minutes

In your sink add a large bowl under a colander so that when you strain the vegetables and cashews you catch the cooking water in the bowl

Carefully strain the vegetables and cashews

Add the potatoes, carrots, onion, garlic, and cashews to a blender

Add 1 ½ cups of the reserved cooking liquid

Add all spices, lemon juice, and tomato paste

Blend on high for 30 seconds to 1 minute until sauce is very creamy

Bring a large stockpot of water to a boil

Add the macaroni and cook to package instructions

Strain the macaroni and add the cheese sauce

Mix until the cheese sauce evenly covers the macaroni

Serve hot
