KFC Style Mac and Cheese – Plant Based & Vegan

This KFC style plant based mac and cheese is perfect for satisfying that creamy, cheesy craving! And, it only takes 30 minutes to make this delicious, comforting recipe.

This mac came out so luscious and is the perfect cozy meal to enjoy while following a plant based vegan diet. 

My super creamy, comforting mac n cheese is based on my original cheese sauce. I jazzed it up with some cashews and spices that are in KFC’s mac n cheese. These adjustments really did the trick.

This mac is so luscious and is the perfect cozy meal to enjoy while following a plant based vegan diet.

Ingredients
  • 1 cup cubed potato
  • ¼ cup cubed carrot
  • cup chopped onion
  • 1 clove garlic
  • ½ cup cashews
  • 1 ½ cups cooking water reserved when draining
  • 1 lb macaroni
  • 1 tsp salt
  • tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp mustard powder
  • 4 tbsp nutritional yeast
  • 2 tsp lemon juice
  • 1 tbsp tomato paste
Instructions
  1. Bring a medium stockpot of water to a boil
  2. Cube potatoes and carrots and add to boiling water
  3. Boil for 5 minutes
  4. Chop onion and cut garlic clove in half
  5. Add to boiling water (with potatoes and carrots)
  6. Add cashews to boiling water
  7. Boil for 3 minutes
  8. In your sink add a large bowl under a colander so that when you strain the vegetables and cashews you catch the cooking water in the bowl
  9. Carefully strain the vegetables and cashews
  10. Add the potatoes, carrots, onion, garlic, and cashews to a blender
  11. Add 1 ½ cups of the reserved cooking liquid
  12. Add all spices, lemon juice, and tomato paste
  13. Blend on high for 30 seconds to 1 minute until sauce is very creamy
  14. Bring a large stockpot of water to a boil
  15. Add the macaroni and cook to package instructions
  16. Strain the macaroni and add the cheese sauce
  17. Mix until the cheese sauce evenly covers the macaroni
  18. Serve hot
