Vegan Baked Apple Cider Donuts

Happy Fall! It’s officially here! To celebrate I am sharing a comforting, delicious recipe for vegan baked apple cider donuts. These donuts have cozy warming spices along with fresh apple cider to make them the perfect fall breakfast. They donuts are super fluffy as well!

All in all, it will only take you 30 minutes to make this recipe. That’s pretty great for homemade vegan donuts!

Vegan Donuts

In 2020 vegan donuts are pretty easy to find, in larger cities. But most places still don’t have access to plant based donuts. With this recipe you can bring the donuts, along with the delicious smells of fall baking, to your home.

The batter is quite simple, and you just need silicone donut molds to get the job done!

The Batter

This batter is made of the usual suspects, flour, baking powder and warming spices. Next, the real kicker is the apple cider. There is so much flavor from the small amount of apple cider! It also asks as a rising agent, leaving you with perfect, pillowy donuts. Yum!

The only vegan substitutes that have to be made are flax eggs, in place of eggs, and vegan butter, in place of butter. Super simple!

The Topping

Next up, we have to chat about this topping. I love that the topping is a very easy cinnamon sugar. You simply dip your fresh donuts in some vegan butter and then right into the cinnamon sugar mixture.

Ingredients
Donuts
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • 1 ½ tsp ground cinnamon
  • 6 tbsp vegan butter
  • 2 flax eggs 2 tbsp flax meal, 6 tbsp water
  • cup apple cider the bubbly kind
  • 1 tsp vanilla
Cinnamon Sugar Topping
  • cup vegan butter
  • cup sugar
  • 2 tsp ground cinnamon
Instructions
Donuts
  1. Preheat oven to 350F
  2. In a large mixing bowl, combine the flour, baking soda, salt, nutmeg, and cinnamon, and set aside
  3. In another large mixing bowl, combine the vegan butter, flax eggs, apple cider, and vanilla
  4. Add the dry ingredients to the wet ingredients, about half at a time
  5. Mix until just combined, not too much
  6. Spray donut molds with a little bit of spray oil
  7. Spoon batter into donut molds, about ¾ of the way full
  8. Add the donut molds to a baking sheet
  9. Bake for 15-17 minutes
  10. Remove donuts from oven and let cool 5-10 minutes
  11. Remove donuts from molds
Cinnamon Sugar Topping
  1. Add the vegan butter to a small microwave safe mixing bowl
  2. Warm the vegan butter in a microwave until melted, about 30-60 seconds
  3. Combine the cinnamon and sugar in a small mixing bowl
  4. Dip the top half of a donut into the vegan butter
  5. Let the excess vegan butter drip off then dip into the cinnamon sugar mixture
  6. Set on a plate and continue with the rest of the donuts
  7. Serve warm
